kale sunshine salad (raw)

This salad is a quick, healthy and delicious side to any meal. Its high nutrient content of vitamins A, C and K and minerals help strengthen the body’s immunity.
All ingredients are organic, unless otherwise noted. Serves 4 as a side dish - 10 minutes from start to finish!
1 Bunch of Lacinato {Dinosaur} Kale
1 Orange
1/4 of a Lemon
1
1/2 Tbsp Extra Virgin Olive Oil
1 tsp Sea Salt or Himalayan Mineral Salt {or to taste}
1/2 Small Clove of Garlic, pressed
1/2 tsp Onion Powder
Alternative Additions:
1 Ripe Avocado and/or
1/4 C Sun Dried Tomatoes {re-hydrated} and/or
1/4 C Sea Vegetable {Arame, Wakame, Kelp}
Wash and de-rib kale. Cut into edible size pieces, drain off excess water and place kale in a large mixing bowl. Squeeze lemon and orange juice directly into bowl with kale. Add salt, onion powder and olive oil. With clean hands, massage kale {as if you were massaging a friend’s shoulders} with ingredients until kale becomes soft and slightly juicy.
Add freshly pressed or zested garlic and any other additions and toss together. Delicious! Enjoy immediately or refrigerate for up to 2 days!
