Metromint Mojito Ice
1 C Fresh squeezed Organic Lime Juice
2 ½ C Metromint Peppermint Water
½ C Organic Sweetener (e.g. Sucanat or Raw Agave)
2 T Organic Lemon Juice
1 ½ t Flax Oil
1 ½ t Unfiltered, Cold Pressed Coconut Oil (slightly softened)
¼ C Fresh Mint Leaves
Bring all ingredients to room temperature. Combine all ingredients except fresh mint in blender at high speed until completely blended. Add fresh mint and pulse blender until mint is in very small pieces. Pour directly into a container adequate for freezing. Place in freezer. After the first hour, break the top layer of ice and remix and allow to freeze until solid. When ready to serve, let ice sit at room temperature for 15-20 minutes. Break apart and crumble. Enjoy!
Suggestion: serve with a simple mix of melon kabobs.

You can use any three varieties of ripe organic melon. For example, watermelon, cantaloupe, and honeydew make a great presentation as well as great flavor.
