quinoa with shitake and arame

This is a deliciously nutritious accompaniment to any meal. High in fiber, potassium, protein, calcium, zinc and iodide this mild, nutty ancient grain and sea vegetable combination packs a powerful punch. Serves 4.

¾ C Quinoa, rinsed
1C Vegetable broth
½ C Filtered Water
¼ C Dried Shitake Mushrooms
¼ t Sea Salt
1T Dried Arame
¼ t Extra Virgin Olive Oil

Place the water, vegetable broth and olive oil in a 2 qt pot. Bring up to a boil over a medium flame. Add mushrooms, seaweed and salt. Once boiling, add quinoa, stir, lower flame and cover. Allow to cook, covered for approximately 15 minutes until quinoa is light and fluffy. Enjoy.
