zucchini hummus (raw)

2 C peeled organic zucchini (cut into large chunks)
¾ C raw hulled sunflower seeds
3 T fresh squeezed lemon juice
2 T extra virgin olive oil
1 t raw tahini
½ t fresh garlic
¼ t onion powder
1-2 t sea salt (or to taste)
½ t ground cumin
½ t ground coriander
½-1 C water
Garnish
black sundried olives
paprika
olive oil

Combine all ingredients into blender. On high speed, mix until smooth and creamy. Place into bowl, garnish and refrigerate for a few hours to set. Serve with fresh vegetables. Enjoy.

Alt. Add a little more garlic, salt, water and lemon juice and you have a great salad dressing!

Or, add less water (it will be chunkier and thicker), add some rehydrated sundried tomatoes and fresh basil, chopped fine and stir in! Makes a delicious dip!
